Hello folks. Issue resolved. Please note that I have resolved this issue by using a different guide. If ever you find this post and it is similar to your experiences, please checkout Raf Rasenberg's Github repo: https://github.com/rafrasenberg/docker-traefik-portainer. The instructions are as clear and day. You even get to learn to add more apps to your stack. Traefik and Portainer are running now and they both have valid LetsEncrypt SSL certificates.
