I've started with the docker-compose example from the elastic documentation added a few things like restart on failure, but unsure what else to worry about.

How easy is Elasticsearch to run yourself? Just set it and forget it? Or does it need continuous care and tinkering?
We have been using an ES docker image that has been pretty hands off for ~2 years. Elastic has good doc on how to do this here: https://www.elastic.co/guide/en/elasticsearch/reference/current/docker.html

That would work, but then you copy everything, along with the container itself. There is a way to just copy the data over. From the page https://www.elastic.co/guide/en/elasticsearch/reference/current/docker.html, I see that /usr/share/elasticsearch/data is where the persistent data is kept within the container.
