"Vanilla" Bedrock server with plugins
One option for you, could be this modded vanilla bedrock called bdsx, because all the other bedrock softwares (Nukkit/Pocketmine etc) all won't work with the features it sounds like you want, nor will it work with your current world. The link to bdsx is here https://github.com/bdsx/bdsx but it requires nodejs plus Linux (basically). This would require you to most likely talk to your host about getting it installed. Another concern is that you might not be able to find the plugins you are looking for with bdsx, but its your only option if you don't want to lose your world and have compatibility with add-ons.
