is there a way to have Google assistant open applications on a windows pc?
Alternative if you like to tinker and have experience with AHK. Using IFTTT, Dropbox, and an AHK Script you can basically automate anything on your PC with a Google Assistant command.

What should I use to control my Computer? I'll list some things that I would like to be able to do
Google Home voice command > IFTTT recipe that saves a text file in Dropbox > AHK on PC watches Dropbox folder and performs actions based on the text in the file. Been going strong since 2017/2018. Try taking a look at my (AHK scripts)[https://github.com/MarcStocker/AutoHotkey]. The IFTTTComputerCommands.ahk is already setup and ready to use. There's tons of comments in the code so it should be fairly easy to setup for your specific needs. Just add/remove any commands from the script before running it, then start creating some IFTTT recipes. If you're smart about it, you can probably setup a single recipe instead of needing one for each command. (I should mention I set this all up long before IFTTT started charging for more than... What? 3 recipes??)
