For simplicity, I like the Longan Nano. The GD32V is well documented. (That's not true for some of that list.) The electronics are easy enough to work with as it's a 3.3V board that's mostly 5V tolerant. It's supported by PlatformIO and there are IDEs available, but it's dead simple to program via GCC, GAS, LD directly. There's a ton of source code on Github. The built-in display is a common 7789-type display, so your second project (after Blinky) doesn't HAVE to be wiring up a display. The provided libraries for GPIO, SPI, and such are reasonable. There are libraries that make it look like an Arduino in case you want to torture yourself.
