How to detect collision with each tile in a TileMap?
Yep, that's what I ended up doing. I made a prefab of the pellet with its own script. And I used the Prefab Brush from the 2D-Extras package made by Unity.

Finally got to making autotiling and I need help with ruling. If anyone can help me put the arrows and x's in the correct spots, can someone please help me?
There is a way to copy rules, as described here. So all you need to do is create another rule tile, put all the sprites in there and copy/paste rules from the previous rule tile.

Advice on 2d iso tiles strategy game
I've noticed there are 224 forks of the 2d-extras repository. At that point, I've realized that maybe I better ask for some advice on forums - some general advice about my visual pipeline, game dev processes, and some tools and about those 224 forks - what's the best out there.

Unreal Engine Editor Utilities are awesome! What about instance painting?
If you want it to behave like RuleTile in Unity you're in luck because its source code is available.

Destructible Tilemap remove neighbor-less tiles
I thought that using Unity's "Rule Tile" as a base and hooking into "RefreshTile" might be a place to start... but I'm not sure how to use this, since it seems I can't actually set the tile to null within this function (this only has a reference to ITilemap and not the tilemap itself...?).
