Are you attempting to use the old plugin or the standalone version? I haven't used either, but the old plugin (that involves extracting a .bundle) won't work, since plugins have been deprecated for over 4 years now, and "channels" aren't a thing anymore. However, it looks like the standalone version might still work, and you don't need your Plex username/password, just your server IP and an authentication token (but you need a Plex Pass to use webhooks).
