Based on this upstream issue and this draft pull request, osbuild-composer just doesn't support CentOS yet. To help indicate demand for this feature to the maintainers of that software, I suggest reproducing the error on CentOS Stream 8 and filing a bug as described here. Once the feature is implemented it will be available in CentOS Stream 8 first.
You will probably be just fine using CS8 in production. There are some gaps right now with third party kmod package availability, but many of those third parties are already working on solutions so this problem will largely go away over time (ZFS is one example). It's work they would have to do for the next minor release anyways. And that's what seems to be continually overlooked with CS: it's just the content that is coming in the next RHEL minor release.
