I'm the lead maintainer of the PiNodeXMR project that does what you're asking ( pinode.co.uk & https://github.com/monero-ecosystem/PiNode-XMR for context) That project is open source, free and supports any SBC with 2GB RAM and an Ubuntu server OS for it. A general but not comprehensive list can be found here. PiNodeXMR can also be built on top of Ubuntu server OS on old laptops too so old hardware can be repurposed into a node. PiNodeXMR isn't just a node though. It comes with a blockexplorer and P2Pool with all basic controls available "click to start" from a web-ui. The Node itself supports tor and I2P too with Dynamic DNS client as optional install. In any form, initial install is from a clean Ubuntu OS then just run one command. Simple. (Pre-made disk images also available)
