Adblockers like Adguard Home or Pihole are just DNS servers. You can run Adguard Home and v2ray in the same docker network, and configure v2ray's DNS server list like this guide, adding Adguard's internal IP as a DNS server. This way when you connect to v2ray on you phone, all the traffics will be filtered by Adguard.
