If you're familiar with Batocera then you should be comfortable with the OS options for Anbernic devices. AmberELEC (for RG351P/M/V/MP) is based on EmuELEC so all the navigation, configuration is built around EmulationStation. You fire it up, you pick a system, you pick a game and it launches. Just have to teach them how to save/load state and exit the game with hotkeys. AmberELEC supports kiosk mode, but not sure of others.
If I went the RG280V route, then I'd install Adam firmware, however, I'm not sure if that has kiosk mode. If anyone could confirm that, then it'd be appreciated.
If I went the RG351M route, then I'd install either AmberELECor JELOS. This is what I'm leaning towards at the moment for a few extra bucks.
