The approach that I advocate for is doing the easy questions in each category, then doing the mediums in each category, and then the hards, if you can do them. I actually recently wrote up a whole bunch of tips here for these types of interviews.
Now, all that being said, there are other options! Not everyone does these types of interviews. This repo, called "Hiring Without Whiteboards," contains a list of companies that don't use data structure/algorithm challenges in their hiring processes.
