AppImageUpdate
AppImageUpdate lets you update AppImages in a decentral way using information embedded in the AppImage itself.
On the run, but I assume you've seen this: https://zap.srev.in/ / https://github.com/srevinsaju/zap
To me as a dev it definitely does, I build my app once and it works on most distros (https://ossia.io)
Nitrux is starting to make an OS ecosystem around Appimages. There have been some interesting projects like nativefier.
If you are in Arch, arch2appimage can easily make packages from Chaotic AUR.
Considering someone has packaged QT 5.15 for centos, and all appimage does is overlay the filesystem, I'm not doing to believe you on this.
As for why MS never did something like this up until recently (Windows Store) it's anyone's guess... Nevertheless, this hasn't stopped third-parties from doing something along the lines of what I've described above.
AppImages can contain update information (and even support partial updates using zsync), check out https://github.com/AppImage/AppImageUpdate.
