I use Multipass to run Ubuntu VM's on my 8GB M1 Mac mini and it works really well. UTM is great as well as u/hikooh pointed out. I like using the command line so multipass is perfect for my needs and it supports cloud-init so you can pass it a cloud-config.yaml file and it will spin up the VM and install packages and configure it for whatever you need it to do. Linux runs great in 2 - 4 GB so the 8GB physical memory is not a problem for me.
