List out (seriously, make a list) which software packages you're installing and then supporting. Find out if any of them require kernel extensions, system extensions, or network extensions. You can build PPPC config profiles in your MDM to have these extensions programmatically enabled (so the end-user doesn't have to go and enable them independently in Security & Privacy pane). Figure out how you're going to keep this 3rd-party (non Apple-provided) software up-to-date. Patch management is still a gnarly mess for most MDMs. Take a look at Installomator.
Weigh the pros and cons about having your end-users be standard users or admins on their Macs. If they are already admins (probably), consider the political blowback if you take away their admin rights and flexibility and autonomy they've become used to. Conversely, consider the security posture of your organization. If it has to adhere to some well-known guides (like 800-171 o 800-53r5), then you may not be able to allow end-users to be admins.
