These two apps, although they use the same technology, namely NewPipeExtractor, work in a slightly different way.
While they both provide a degree of privacy, with NewPipe, the extraction is done locally on your phone and all the request sent towards YouTube/Google are done directly from the network you're connected to. This means you're not dependent on a middleman server, which results in better speeds and more reliable function overall. The cost is, that your subscriptions are stored locally, although you can set up a manual sync between your Android devices and/or other alternative desktop frontends like Invidious or Piped, but that still requires quite a bunch of clicking - as far as I know, there is no complete sync solution developed by anyone so far.

LibreTube, on the other hand, proxies all requests and even the video stream through a Piped instance (which you can also self-host). That instance uses NewPipeExtractor too, but the extraction is done server-side and the data is then sent towards your app, which in theory provides a little more anonymity, provided you are not the only user of that instance. The Piped instance also holds all your playlists and subscriptions, so you don't have to worry about sync, you just subscribe on your phone, log in on your desktop and have the same content at hand at all times. It also supports other content sources like PeerTube, Soundcloud and Bandcamp.
ViMusic - looks nice, works reliably, but very direct with YouTube, all local z-huang/music - similar to the above, in early development BlackHole - very similar but more feature-loaded, has Spotify support but that didn't work for me all that well HoloPlay - which uses an Invidious instance and can connect to your account, but is little harder to setup, doesn't have subscriptions/feed functionality, and is now undeveloped for quite long MusicPiped - which, contrary to it's name, also uses Invidious, is also unmaintained for a long time and at least for me, doesn't even seem to work
