I DIYed it for a few months, but then I found a pre-built docker image which does exactly what you want. It's just passed a month of QA on our end and I'm about to put it into production: https://github.com/serversideup/docker-php

Then another thing I use is https://github.com/2ndalpha/gasmask which is basically a multiple /etc/hosts editor (in case you're using Mac OS). But Windows/Linux must have their own alternatives. Basically I put fancy names here, like nameofyourproject.localhost or something like that
