We do have a roadmap item for more database support actually as well. We have a few more initiatives to roll out before that, but you can follow the GitHub discussion for more info as we have it. In the meantime, Mongo seriously does a great job with the document-based structure that Payload supports and you should give it a shot if you haven't. We've liked it so far.
