I've built this thing. It's a command-line tool for converting Anki decks and collections into git repositories (and back). It is extremely free, and the source code is available.
I've already uploaded an example deck to GitHub, it's a German one. Not mine, obviously, I just grabbed something from AnkiWeb at random for testing. If anyone wants to see their favorite deck as a GitHub repo, hit me up (ideally open an issue)!

There is a lot of existing work on collaborative decks or deck import/export tooling happening right now. There's something new called https://ankisync.com/ that looks neat, there's also a huge refactoring effort going on currently in the rust backend of https://github.com/ankitects/anki to support importing and exporting in a number of formats, e.g. CSV and JSON, and there's also https://ankihub.net/ which is about to be released by the Anking folks.
