It builds & works fine here with OpenGApps pico. It even tells that only the pico variant seems to be working with 12.1 at the moment so other variants aren't provided until OpenGApps starts officially supporting it.
Btw there's another GApps project called FlameGApps (only supports arm64 though) which supports 12.1 too. I think if you're to download the basic variant (something in between OpenGApps pico & nano) and modify it to include the amd64 apks for Android 12.1 instead of arm64 ones then the script (which the LSPosed/MagiskOnWSA project is also using under the hood) should be able to use it fine for your WSA version too (that is, if the script doesn't depend on the OpenGApps installer specific features/options). It might be worth a try if you have a Linux environment already installed & ready to go and if for some reason MagiskOnWSA really doesn't let you build the 12.1 version with OpenGApps pico.
