Given that eveything in flathub is open source (well, the packaging and the store are open source, see: https://github.com/flathub/flathub)
But this aside - in the german language it is nowadays typical to include both genders if you address them. Its hard to get for english speakers but we have a variant for teacher in male and female variant. And to not forget half of the population we use both now (because we are good people right?). Probono keeps an repository with political people who did this with references and whatnot because he doesn't like to be political correct: https://github.com/Sprachpanscher/Sprachpanscher . For me this is a red line
The reason being that there is literally no point to duplicating flathub just to have your own repo, why waste computing resources. If you want to host a special build of apps that aren't on flathub, then yeah, people are hosting their own remotes. See this one, this one and this one.
Double-click run apps are fantastic for one time use apps (i.e. I needed an autoclicker, this got me set up in less than 30 seconds and I never left my browser)
If you're referring to the old HOWTO article for hosting your own snap store server, the software it used to do that stopped working several years ago.
