Looking at the forked version from MDT https://github.com/Tomslack/ManbabyDungeonTools/tree/main/Shadowlands, you can calculate the percentage using the overall dungeon scale multiplier, mob count, and individual mob %.
The mapping data is here: https://github.com/Wotuu/keystone.guru/tree/master/database/seeds/dungeondata. I think the structure speaks for itself. I have an admin interface where I can more easily make changes, but if you're willing to dig into the JSON and make some changes manually that's great! I'm a bit constrained by Christmas shenanigans but I'll try to be available here and there today and get some errors ironed out asap. Thanks a lot for your interest and help!
The source code is available on GitHub. I just forked it just in case he takes it out (it takes 1 second to do that). The licence, which he chose himself, allows anyone to make modifications and re-distribute.
