flatpak override --user --env=GTK_THEME=elementary:dark org.libreoffice.Libreoffice applies the dark elementary theme to apps, but they still don't respect the dark style preference, ie the switch in the settings. You could also do flatpak override --user --env=GTK_THEME=elementary:dark to apply the dark theme to all Flatpaks. Using a tool called stylepak, you can flatpak the elementary stylesheet so that the accent colors carry over. You would apply the themes using flatpak override --user --env=GTK_THEME=io.elementary.stylesheet.blueberry:dark for example. If you would like to unset the dark preference, you could apply flatpak override --user --unset-env=GTK_THEME. I always install my remotes with the --user flag so that's why I've used it here. If you've added Flathub system-wide, you will have to edit the commands respectively.
try flatpak search theme^^ I actually would've to "google" it myself...don't remember... but there is some "elementary stylesheet" or whatever that I found.
