I guess Strapi is a good one. It's a headless CMS, an alternative to WordPress.
You can even simply start by updating docs. One of the first ways I started was simply fixing typos. It'll get you more familiar with the PR workflow, the repo's CI, etc. I've had a great experience contributing to both chakra-ui and mantine.dev.
