non-stock apps are encrypted, so you’d first need to decrypt the app binary with something like flexdecrypt (available on Packix) and then to dump headers. I’ve had pretty good luck with classdumpios which is also on-device. There are a lot of other options too in the event that it doesn’t work

“A cross-platform build system for creating iOS, macOS, Linux, and Windows programs.” - Theos.dev. I’m not sure I’d say it replaces Xcode, because the two serve different purposes, but you don’t need Xcode for tweak development. The difference between the two is that theos is catered specifically for tweak development whereas Xcode is not. That and Xcode is platform specific, as you mentioned.
