I've used resumake.io and like it. It gives you have the option to export to JSON, LaTeX, or PDF. You can switch between their templates at any time, which is pretty nice.
I'll give my two cents on using LaTex for my Resume as well. If you want to start using LaTex I would recommend the VsCode extension LaTeX Workshop. After that is installed you will need a LaTex distribution, I would recommend MixTec for being light.
