1sat/vB is fine, but it'll come through once a not full block is mined (visualization on mempool.space - transaction fees in block are yellow). If you don't care if transaction takes longer, you can always set 1sat/vB for minimum fees. Set it lower than 1sat and miners won't even mine it and after several hours in mempool it will be send back to your wallet. And to answer your question - it is possible to edit fees after you brodcast your transaction, but not on all wallets. Electrum supports it, idk about Atomic wallet. Sender is setting and paying all fees.
