There's also Notepads which looks prettier than Notepad++, but has some minor analytics built-in, but is not tracking any "user privacy related info" and is not "sending any of your typing or files over" to the developer and since the software is open source that can be verified by anyone. Since it's a Microsoft Store app it will have some basic diagnostic info sent to Microsoft, but that can supposedly be disabled in the global Windows settings.
On Windows the best option I have found is Notepad++ combined with either the built-in Dark Black theme or the third-party Hyper theme. The built-in Twilight theme is also pretty nice. There are also a bunch of other dark themes that can be found via various top lists and GitHub. To select a theme, go to Settings > Style Configurator and then choose the theme from the drop-down menu and click "Save & Close". If you want to add a downloaded theme into Notepad++ you first have to go to %APPDATA%\Notepad++ and then go into the themes directory (or create it if it doesn't exist). Then copy paste the .xml files there and restart Notepad++ and the downloaded theme(s) should have been added into the Style Configurator.
