You'll need to re-export the file from OpenShot if you need to go back and make changes. Althogh you can losslessly edit h.264 video to an extent, you can only add cuts on the full-picture i-frames so you may not be able to accurately remove the section you need. (There is software like lossless cut that can do this, and actually Shutter can too using the 'cut without re-encoding' function.)
In the context of ProRes, you've got the one true ProRes Codec which is propriatory by Apple, and then a couple of reverse-engineered FOSS options in the form of prores_ks and prores_kw which is what pretty much all FOSS software uses including Shutter, OpenShot, Kdenlive, VLC... really anything based on the FFmpeg codec library.
