Micro (a very nice cli editor) has an option to automatically save every x seconds. It is available in the official fedora repository for a long time and will most likely stay there: https://github.com/zyedidia/micro
If you use KDE, you can use KNotes. A multi platform alternative can be CherryTree. A command line alternative can be tnote, but all of these solutions needs extra dependencies. So, only solution seems vim or emacs with org mode
P.S. I think that a special mention for Tomboy-NG is needed. Is a rewrite of a old Tomboy application, removing Mono dependencies
