You should be able to get this to work with a combination of file system links, different libraries, and PASTA. In your file system, you could create a separate top-level folder and create links to the files in your main TV library (on Windows, you could use mklink, or ln on Linux), without taking up additional storage space. From there, create a new library in Plex pointing to your new folder. Once everything is scanned in, you can then use PASTA to change the audio/subtitle tracks of an entire show in one go. That way in your main library you could have English audio, and use PASTA on your second library to set all audio to Spanish and enable English subtitles.
