That looks fun! I'm always fascinated when old games run so well on not only modern hardware, but also specifically with input devices that weren't available back then. On that note, it's cheating a bit as it isn't DOS anymore, but X-Com: UFO Defense / UFO: Enemy Unknown (and Terror from the Deep) is (almost) absolutely perfect on a touchscreen device and available for iOS (or here as OpenXcom Extended) and for Android. I imagine the DOS version should also work well, though. The large buttons at the bottom of the screen feel like they were tailor-made for a touchscreen device and being able to save at any time makes it such a good pick-up-and-play experience :)
I’m doing all of this through iDOS (which is just a DOSBox variant compiled for iOS/iPadOS devices). I don’t own an Android tablet, but a quick search shows multiple versions of DOSBox available on the Google Play store you could install on your Android device. Once installed, there is usually a way to drop DOS game files into a folder accessible by DOSBox as a drive mount. You CD to the directory and run the game.
