Do you have the debounce_text_changes flag? I used to have the same problem where Solargraph takes too much time but it's with formatting. I raised an issue in the nvim-lspconfig repo, and received some good suggestions and got it fixed. For jumping to definition it works fine, it is just that when I first open up a ruby file, it takes a few seconds for Solargraph to get initialized. But can you confirm that the solargraph client is actively attached the the ruby file buffer with :LspInfo?
