It is called Elasticsearch output for a reason and Beats / Logstash 7.13 expect the full feature-set of Elasticsearch 7.13 including new data types, APIs,... that are also tested in this combination; others will most likely fail somewhere at runtime. Forks with a different feature-set will need their own output and AWS has maintained an AWS ES Logstash output plugin (https://github.com/awslabs/logstash-output-amazon_es) for years for example.
