It sounds like you would like a WYSIWYG markdown editor, since it pretty much has the features you are looking for. Joplin, for example has a markdown editor that's pretty easy to use.
Have you tried VS Code? It's like Notepad++ 3.0 with plugins that have functionality similar to what you want. It's all the rage these days among web developers but it does so much more. It also has some sweet shortcuts for rapidly editing multiple lines of code and whatnot. Definitely check it out, I'm in love.
