Multi-touch and the pen still do not work on the SP7, and other Gen7 devices, but there is work being done on it. Touchscreen still works with single-touch.

Everyone else has mentioned how the SP7 performance is like on a day-to-day basis and its quirks (since it's the newest SP, excluding the SPX), though you could make a more informed choice of choosing the SP7 to run Linux by consulting the giant table for what works and what doesn't on Surface Linux and the dedicated SP7 page to know what to expect. Currently, it appears that SP7 should be fine if you don't need/use the touchscreen and Surface Pen.
