I think BLIS does one of the best jobs at practically illustrating how to write performant code for multiple architectures. Check out their github but the basic idea is to isolate a kernel for each architecture but also provide a generic implementation that's not performant but at least guaranteed to run. This is of course what u/thegreatunclean is recommending, but I think a practical example helps because the build process is challenging.
