I am currently using Proton-GE 6.1-GE-2, worth a try ! It also has GTA V keyboard issue fixed Proton-GE 6.1-GE-2 I am using EGS from Lutris, also you can give https://github.com/Heroic-Games-Launcher/HeroicGamesLauncher a try, one of my friends is using Heroic game launcher perfectly fine with GTA V using the same proton version !
