If you literally only use Mullvad for qbittorrent, another potential solution is to run it in a container, then use something like gluetun to force the container to use a VPN interface. That way you're isolating the one application that needs special treatment and forcing it out through the VPN, rather than your default state being "use VPN" and carve out all your other use cases
