Here is a GUI tool to manipulate Exif data, which is the most common form of metadata.
Another common metadata is in containers, like Matroska containers. There it's actually a part of the file itself, but there it's also trivial to manipulate to whatever you'd like. Most commonly found on videos. MediaInfo can show this data nicely. ffmpeg is the most powerful tool to modify it, but it's CLI.
