Personally, I use emacs with org-mode.
My philosophy these days is text formats like markdown and latex, and if I need to I can always compile it into whatever format the recipient wants. However for something completely different homebrewery is fun. Yeah it's meant for d&d, but no reason that has to be its only purpose.
WordPerfect is a thing, still, and while its way more powerful, some would consider to be pretty clunky in terms of usability.
WordGrinder. It's great for distraction-free writing, and can output Markdown or troff. It's a great tool for getting words down, but its otherwise pretty limited (which I think is one of its strengths). When I need to print or generate a PDF, I have a little script.
