evil-collection actually has quite a lot of stuff, but I try to avoid actually using it. They have a key translation feature, but I much prefer to bind keys for modes directly. I often look at their source for ideas. It's actually not that hard to bind keys for most packages and it becomes easier with practice. Also, a lot of modes default bindings seem fine to me. For example, org-mode I leave all the default bindings alone and bind a few other things to the SPC leader key and , which is another leader key I use for mode key maps. The ediff mode is another example I leave alone and just use the defaults. However, there are things I completely rebind if I like the packages enough to invest the time. It's also an opportunity to learn the package better.
Yes, but I'm pretty out there since I have my own key-bindings for evil-mode to work better with the Colemak Mod-DHm keyboard layout. I go into it detail here if you're interested. I do talk about my usage pattern at the time, but it's probably changed somewhat since I wrote that. I favor keys like f/F to move horizontal (s/S for me actually but that doesn't matter) over h and l (m and i for me but in same position). I do use j and k (actually n and e) for small vertical movement.

I use my own modal editing. Meow , it is small lightweight but still customizable, and include some new ideas.
- Embrace (the ``xah-insert`` family of commands are not powerful enough for parentheses editing imho, and most of them are extremely useless). I've managed to configure Embrace to behave almost exactly like XFK, just with a wider range of features.
- Smartparens (a package providing this feature for structural editing that I almost cannot live without)
