GNU Guix! A fully functional package manager and distro heavily inspire by Nix. Fedora Silverblue - pretty well-known at this point, but it’s championing immutability

A change is in the works to introduce a so-called 'soft-reboot'. This aims to only reboot the userspace. With this, a 'hardware-reboot' will only be required for kernel-updates(/changes).
Universal Blue - Not a separate distro, but a project based on Fedora Silverblue that delivers the operating system content using an OCI container. Some of the OCI images are described as "Fedora/Kinoite with Batteries Included", and there are some custom OCIs as well.
