Installation on a mac is pretty easy using the mactex package. Then for the editor itself I like TexStudio. Overleaf has the advantage of included backup and collaboration tools; if you use a local file don't forget to set up a back up/versioning system.
Hopefully, you already organized literature references as .bib file in the bibtex format. There are multiple managers available (survey wikipedia), and research libraries offer workshops on an afternoon to set you up an going. One of them is zotero - open source, cross-platform, well documented (there is a r/zotero, too). With zoterobib on one hand, the doi of journal articles/ISBN of modern books on the other, you equally can generate snippets of .bib files without an installation - but it is less comfortable than batch processing a couple of pdf at once zotero allows. (If your are lucky, publishers offer the export of the bibliographic data in a .bib file right next to the .pdf of the publication.)
