Personally I'd recommend using Ultima Underworld Portable though. Last time I checked the GOG release still had mouse and sound issues. This fixes both, comes with MT-32 ROMs so the music's now good. And it has a toggle for modern wasd+mouselook controls in the launcher. Until hell freezes over and the source code leaks it's the best way to play both games today.
I've never used Portable, but I've had good luck with Underworld Exporter. It's a unity port primarily for underworld 1, but underworld 2 is being worked on again as of this year.
