InfluxDB

There's the ipmi_exporter
A slightly tricky bit is that there's not just one way to do ipmi collection so you may have to shop around through various exporters to get one you like. Some of them use local commands on a server, some use remote commands over, some use snmp, lots of ways to get data and different hardware vendors are better or worse with different options. The redfish example mentioned says they are tested against Cisco ucs and Dell servers, so if that's what you use probably it's good. If you need to monitor hp ilos you might do better with something like https://github.com/infinityworks/hpilo-exporter Basically whatever brands you need to monitor, type that into Google with the words prometheus exporter and see what you find.
