I'm a contributor at AstroNvim, I would be really interested to know if you tried AstroNvim with the current V3 and if you tried it with astrocommunity you can import pre-configured language packs and plugins, if you ever need assistance you can also join the discord we're always happy to help with any questions you might have.
Using packages in AstroNvim is as simple as using native lazy.nvim there are no abstractions.
You know, before lua configuration and plugins there was only vimscript for your init file in Neovim and things were rather simple. Maybe not the best idea with all of the modern LSP stuff, but you can get really far with just a 200-400 line init.vim. Heck, there's even kickstart.lua which sets up a lot of the modern IDE-like things you need and you can modify the base experience to your liking. Kind-of a middle ground between a pure init.lua and LazyVim. You could give it a try! It's fairly easy to setup: just download the file and save to your init.lua.

Personally I have both the previous and latest stables installed (mostly for testing plugin contributions), as well as a script that builds nightly . If you didn't know, they include prebuilt assets on the releases page, or you can use bob, in case your distro falls behind.

I totally agree with you. I've been working on my neovim config for almost 3 years and looks like it will never finish. I am already happy with my EcoVim config and there are not many changes in a few months, but always something. I think that if you don't have time just stick with one of the pre-build community configs if they work for you.
