🎥 Neovim Config Switcher
If you want to peek at it now, you could try a neovim version manager like bob... https://github.com/MordechaiHadad/bob I've been using it recently and it makes experimenting with new stuff a bit easier. Then if you run into issues you can switch back to a stable release. I'm considering doing a video on this too since I think it would be helpful to some... and I don't think it's very well known

I love vim but I don't want it as a hobby
Personally I have both the previous and latest stables installed (mostly for testing plugin contributions), as well as a script that builds nightly . If you didn't know, they include prebuilt assets on the releases page, or you can use bob, in case your distro falls behind.

What is the current state of remote neovim?
Now I'm working on a 'portable' neovim config that makes use of this. I also use https://github.com/MordechaiHadad/bob to easily install the latest version of neovim on any platform (at least works for windows/mac/linux). Bob itself can be installed with rust's package manager cargo, which is easy to install itself (rustup). Then you can use mason.nvim to automatically install lsp servers and other packages/binaries you might need in a portable way.
