Honestly, I would just use Gluetun. It has Mullvad and many other von providers baked in and also supports WireGuard (which is what Mullvad is the fastest on). OpenVPN is far less superior. Gluetun just runs in a docker container and you can route other containers or even the whole host if you want. If you have docker experience, then I would go for it. Good luck!
