The best option for a YouTube alternative right now is PeerTube, since it's part of the Fediverse, which is the same network that Mastodon is part of. This means that, like Mastodon, anyone can host their own PeerTube instance, and people from one instance can interact with posts on another instance. And since they're on the same network, Mastodon users can directly comment on PeerTube videos without needing a PeerTube account. The lack of large centralized infrastructure also means that PeerTube doesn't have to force advertisements to get funding to manage server costs.
On desktop, the most straightforward option is to use uBlock Origin, which blocks advertisements and client-side tracking. Note that Google's plan to kill off Manifest V2 (which adblockers rely on) has been delayed, but will still likely happen in the near future and you should switch to Firefox (or a Firefox-based browser) if you haven't yet. If you want an alternative frontend that makes requests to YouTube on your behalf, so they can't track you at all, check out Piped or Invidious.
For Android, I suggest either NewPipe, or ReVanced. (ReVanced requires a bit of setup work, likely to avoid the legal issues that Vanced got into.)
